Tea-Based Desserts Trend at NYC Restos
by KATHY YL CHAN

Tea isn’t just an afternoon drink anymore—it’s quickly establishing itself as the hot new ingredient for desserts at New York’s best restaurants. From classic green and black teas to a range of herbal tisanes, there’s no limit to how teas can be incorporated into after-dinner treats. Here, a few of our favorite sweet selections around town.

Green Tea Custard and Strawberries at Gramercy Tavern

In the Dining Room of Gramercy Tavern, Pastry Chef Miroslav Uskokovic uses green tea to create a custard that’s velvety and delicate with hints of white chocolate. It comes with strawberry ice cream, shards of caramelized brioche, and housemade honey crunch. And those tiny fresh strawberries on the side? Surely the sweetest in town. 42 E. 20th St., 212-477-0777

Grilled Corn Crème Brûlée at Union Square Cafe

Grilled and just-shucked corn lends a savory element to the crème brûlée at Union Square Cafe. The tea element comes in with a lemon-verbena-infused custard that’s paired with blackberries and a corn tortilla. Pastry Chef Sunny Raymond has also incorporated tea-based treats into her signature cookie plate in the past. 21 E. 16th St., 212-243-4020
