New York City-based Union Square Events (unionsquareevents.com) mixes sweet — fresh cherries and house-made honey syrup — with savory and tart flavors like tarragon and red verjus (the pressed juice of unripened grapes) for a balanced cocktail that’s a favorite of clients. Ask your F&B contact to make a similar concoction, based on the recipe for the tarragon rickey:
Tarragon Rickey recipe
5 sweet fresh cherries
½ ounce honey syrup (honey, water and zest of orange)
1 spring fresh tarragon
Pinch of sea salt
1 ounce red verjus
Muddle cherries, honey syrup, salt and tarragon together until a thin purée is formed. Add verjus and mix well. Strain into a double rocks glass filled with ice, and top with seltzer. Garnish with zest of lime and a sprig of tarragon.
