Blue Smoke is delighted to announce the appointment of Emily Isaac as Blue Smoke’s new Executive Pastry Chef. After rigorous searching and tasting, Emily swept the Blue Smoke team off their feet with her infectious smile, impeccable craftsmanship and distinguished palate. “Emily and I have spent a lot of time discussing our culinary vision for Blue Smoke. Our conversations have been inspiring and thought provoking, and I am thoroughly excited to have Emily help write the next chapter for Blue Smoke,” said Jean-Paul Bourgeois, Executive Chef of Blue Smoke.
This role represents Emily’s homecoming to Union Square Hospitality Group (USHG). She previously worked as Pastry Chef at Union Square Cafe alongside Chef Michael Romano. Before that, Emily began her culinary journey at Arcadia under the tutelage of Anne Rosenzweig, and then moved on to Aquavit. In 2007, Emily opened her own bakery in Park Slope called Trois Pommes Patisserie, which she operated for almost 8 years.
Isaac will officially take on the role of Executive Pastry Chef of Blue Smoke in November, with menu changes expected in Winter 2014. As Chef Bourgeois evolves the menu, drawing inspiration from the diverse flavors and ingredients of the American South, so too will Emily as she begins to craft a menu that combines her talented background with a Southern sensibility. It is with great excitement that USHG and Blue Smoke welcome Emily back for an encore performance!
